From rainbow-hued desserts to pillowy soft Castella cakes and the recent resurgence of cheese tarts (thanks to the arrival of Japanese brand Pablo Cheese Tart here), 2017 has seen a number of food trends come and go. As we wait in eager anticipation for the next big thing to hit the local gastronomic scene, we’ve turned our attention to a classic dessert that’ll always remain in vogue: Cheesecake.

Typically made with cream cheese, ricotta or tofu, cheesecake has been favoured the world over for its fluffy texture and rich flavour. It can be prepared baked or unbaked (where the cake isn’t put in an oven, and is simply left to set in the refrigerator before being ready for consumption), and with bases ranging from digestive biscuits to crushed graham crackers and Oreo cookies. There are different variations of it too, the more common ones being the New York cheesecake (which is incorporated with heavy cream and cream cheese, and has a dense consistency) and Japanese-style cheesecake — which is softer and carries a lighter flavour. These may come topped with everything from fruits to chocolate and caramel.

Cat & the Fiddle

This online retailer offers 17 types of cheesecakes, with tempting options such as Oreo cookies and cream, Mao Shan Wang durian, chocolate, and sea salt caramel. Our favourite is the Fickle Feline cake, which is composed of 10 slices in different flavours like tiramisu, strawberry, lychee martini, and mango vodka. A non-alcoholic version of the cake is also available. Cat & Fiddle will open a physical store next month at Clarke Quay Central, where walk-in customers can buy cakes off the counter.

Situated at Hilton Singapore, D9 Cakery is known for its signature American cheesecake, which is baked with Philadelphia cheese and boasts a light and velvety smooth consistency. The cheesecake is also available in options of blueberry, caramel, and maple and pecan. If you can’t decide, go for the lounge’s Saturday high tea buffet, where you get a free flow of the cakes alongside savoury dishes and TWG tea.

PS.Cafe One Fullerton

PS.Cafe may be more known for its signature truffle fries and savoury dishes, but it also has a pretty solid repertoire of desserts. A must-try is its dark chocolate banana cheesecake, a sweet and delicious treat coated with soft bitter chocolate ganache. The cake is available across PS.Cafe’s various outlets including its newly opened One Fullerton branch.

Cake Spade

Leave your diet plans at the door if you’re planning on visiting Cake Spade. This café in Tanjong Pagar offers an assortment of baked and no-bake tofu cheesecakes, as well as indulgent cream cheesecakes laden with toppings. Its highlights include a strawberry tofu cheesecake (which comes with an Oreo cookie or digestive biscuit base), Speculoos cookie butter baked cheesecake, and a red velvet cake with cream cheese.

LeTao Singapore

An established name in Otaru, Japan, LeTao made waves late last year when it opened its first takeaway shop in Singapore at Ion Orchard. The dessert chain is famed for its double fromage cheesecake, which is made with imported Italian mascarpone cheese, and comprises a top layer of unbaked cheesecake and a bottom layer of baked cheesecake. The result is a light and fluffy confection that seems to melt in the mouth. The cake is also available in other flavours such as double chocolate and pumpkin.
