Created by Chef de Cusine Carlos Gaudencio, this four course extravaganza takes you on a tour with light appetizers that include white asparagus, thick sultry cappuccino foamed soups with Sauternes wine and truffles, and the Pièce de résistance, a dish of Beef Tournedos Rossini with Perigordine Sauce (savory tenderloin grilled to perfection served with seared Foie Gras and sweet garden vegetables.) Selected wines from France, Chile, and Italy add the perfect tartness needed to complement each of the rich foie gras platters. This will also be a once in a lifetime chance to sample the 'Foie Gras Truffle Surprise', a Chef-created decadent Foie Gras Ice Cream. The treat is actually quite subtle, mixed with a chocolate and liquor overtone to round out the flavors.
This Foie Gras menu is highly recommended for special occasions, particularly if the attendees love the finer things in life. Bring a good appetite, and don't forget to dress smart, you just might run into your favorite author here.
