Following the tremendous success of celebrity chef Jason Atherton’s first venture in Singapore -- Esquina tapas bar in the quaint corner of Club Street, POLLEN, a modern European fine-dining concept restaurant, officially opens its doors to public within the brand new Gardens by the Bay.
What it is: Helmed by executive chef Colin Clague, Pollen will be presenting mainly Mediterranean-inspired cuisines, with some of the finest classics from Michelin star Chef Jason Atherton’s flagship restaurant in London, Pollen Street Social, featured in the menu.
The look: The only restaurant situated within the Flower Dome at Gardens by the Bay, Pollen is surrounded by its own garden of Mediterranean herbs and vegetables for use in its dishes. Keeping true to its Mediterranean inspiration, Pollen is designed to exude simplicity with its blue mid-tones and earthy colours throughout the 560-square-metre space. Two distinctive dining areas separate the indoor space from the upper terrace level. The lower space features a main dining hall with an iconic nine-metre long dessert bar, while the upper level depicts an al-fresco dining experience with a one-of-a-kind Sommelier bar in Singapore.
Food and drinks: Some recommended signatures include a tangy starter of scallop carpaccio (S$26) to get your appetite going, followed by the herb roasted pork belly (S$48), where the succulent meat is complemented with broad beans, slow-cooked squid, chorizo and wild rocket. To finish off the meal, try executive pastry chef Andres Lara’s peanut butter and jelly ($16), complemented with a fruity surprise of cherry yuzu sorbet and cherry puree.
