Following announcements for the slated openings of restaurant and lounge VOGUE Club as well as high-end sushi and martini pairing bar SushiTini in Singapore, Trilogy Hospitality, the group behind these two unique dining and entertainment concepts, has unveiled plans for a third addition to the portfolio. This time round, the company has chosen to hedge their bets with a more conventional choice of restaurant — the ever-green traditional steakhouse.
What’s the buzz: Not just any steakhouse however — a steakhouse with all the theatrics of an open kitchen, tongue-in-cheek branding, and quirky interiors. With a tentative opening date of 3 June, Bull & Butcher is designed for diners to enjoy not just the food, but also appreciate the craftsmanship of a butcher, and the culinary skills of the kitchen staff. After all, according to CEO Jacco Klip, “a large part of a good steakhouse is being part of the kitchen’s theatre”.
The look: And in this case, the “kitchen’s theatre” will consist of an exhibition kitchen which invites diners to watch and engage with the team of trained butchers — dressed in traditional chain mail aprons — to pick their preferred cut of meat; cowhide upholstered chairs matched with bespoke high tables; and a signature exposed brickwork wall featuring vintage images of prize bulls and butchers at work.
Food and drinks: On the menu, signature cuts flown in from Australia and the United States and prepared on Bull & Butcher’s customized charcoal grill will form the highlight. These are meant to be paired with quintessential steakhouse side dishes like creamed spinach, mashed potato, and sautéed forest mushrooms, and washed down with a selection of wines, bottled beers, fresh juices, and soft drinks. Specials and set lunch menus will change daily and be presented on feature blackboards throughout the dining area.
