Farm-to-fork Thai restaurant TAAN presents us this month with another series of ‘Farmer’s Talk Dinner’, focusing on local, “underappreciated” and “devalued” ingredients. Entitled ‘Searching for a Sea Change,’ August’s topic is all about insights into small-boat fishing and organic prawn farming. Shared by special guests Kwanruethai Sue-kawee and Chompoonuch Kert-mhusik, representatives of the esteemed seafood supplier Mahasamut, together with TAAN’s Executive Chef Monthep “Thep” Kamolsilp, the Farmer’s Talk dining pop-up will also feature the chef’s 15 seafood-laden dishes. Expect everything from Southern Curry Powder-marinated Chao Phraya Catfish and Issan Olive Leaves Dolmas with Fermented Fish over to Tapioca Oyster Cake with Toasted Salted Chili. Following the success of the first two episodes, ‘Friends of 80/20‘ is back this month for its third culinary party. In partnership with Fine Dining Lovers by S.Pellegrino, here’s a cooking series where husband and wife team, chef Napol “Joe” Jantraget and pastry chef Saki Hoshino of 80/20 invite their chef friends over for cooking revelry. This time around it’s Chef Ryohei Hieda of Shoun RyuGin from Taiwan (two Michelin stars and No.31 on Asia’s 50 Best Restaurants 2019). The three chefs will team up to create a spectacular ten-course meal focusing on Thailand’s local ingredients to showcase a toothsome mix of Thai, Japanese and Taiwanese cuisines.
