What’s next after Mandarin Oriental Hong Kong’s Pierre and M Bar permanently close this July

The iconic luxury hotel’s sky-high bar and Michelin-starred French restaurant (helmed by Pierre Gagnaire) will be replaced with “new 25th floor [dining] concepts”, to be announced later this year.

This past weekend, the Mandarin Oriental Hong Kong announced that it would be permanently shuttering two of three dining venues on the hotel’s 25th floor. The decision comes amidst an exhaustive renovation project slated to commence this August: when Mandarin Oriental staff will begin a six-month long process of redeveloping the space that is currently occupied by Pierre, for multiple, as yet undisclosed dining concepts.

Meanwhile, Man Wah — Chef Wong Wing-keung’s award-winning bolthole for fine Chinese cuisine — will be partially expanded, taking over the present location of M Bar.

To give both venues a fitting send-off, Mandarin Oriental Hong Kong is currently running multiple promotions til 31 July.

In consultation with Pierre Gagnaire himself, Chef de cuisine Jacky Tauvry has composed a trio of menus honouring his mentor’s “outstanding modern French cuisine.” Diners are invited to sample the ‘Memories of Pierre Gagnaire’ retrospective menu — available as a five-, seven-, or nine-course tasting menu (priced at HK$1,688; HK$1,988 and HK$2,388 respectively).

For those who prefer indulging on the weekend, Chef Tauvry’s ‘Wine Not’ lunch set presents fantastic value every Saturday, configured as either a three- or five-course menu (HK$888 and HK$1,288 respectively) inclusive of wine pairing.

For the ultimate farewell — following 14 years of molecular gastronomy in the heart of Hong Kong — guests should reserve a table on 31 July for ‘The Grand Finale’: a degustation menu comprising nine of Chef Gagnaire’s all-time greatest creations, paired with matching wines and a signed cookbook to take home (HK$4,988).

Mandarin Oriental’s Michelin-starred Chinese restaurant Man Wah will be expanded to encompass the space now occupied by M Bar (pictured), following a 6-month renovation.

Next door at M Bar, a selection of the venue’s most popular cocktails over the years will be offered from 15 June til 30 July, culminating in an evening of festivities (31 July) titled ‘Lights Out at M Bar’. For HK$688, guests will be invited on the bar’s last evening of service to enjoy a selection of canapés, a glass of Krug and live entertainment until late.
