Following a spate of closures in 2018, Lan Kwai Fong has been a bit quiet in recent months especially when it comes to the nightclub scene — but California Tower newcomer Ignis is ready to set things afresh with its all-in-one venue for fine dining, cocktails and dancing. The new two-storey establishment features a restaurant with a European menu helmed by Executive Chef Mark Sin, who cut his teeth in Michelin- and Rosette-accoladed restaurants such as Bo Innovation. On the dance floor, expect a state-of-the-art sound system and lighting effects, world-class DJs and a sophisticated multi-sensory cocktail experience. Art cocktails at Dr. Fern’s Gin Parlour
Ming Fat House Group is celebrating Hong Kong Art Month with a creative twist on new cocktails, and you can expect a slew of highly ‘grammable and delicious, limited-time additions to the menus at sister venues Foxglove, Mrs. Pound and Dr. Fern’s Gin Parlour. Check out the floral inspiration at Dr. Fern’s, with drinks such as the Flowers in the Snow (HK$160), a mesmerising cocktail inspired by the mysterious Robert Tracy painting of the same name that alludes to the soul-cleansing properties of nature. Featuring marshmallow-infused gin, honey, cream, egg white, soda and local jasmine tea, it’s a sweet, gentle respite after a long day. The Blossom is a more pronounced homage to botany, featuring a rainbow array of edible blooms suspended in Whitley Neill Quince gin, London Essence Bitter Orange and elderflower — a zesty, vitamin C-injected spritz designed to wake up the senses.

New cocktails at Chifa
Peruvian Chinese fare at Chifa gets a revamp thanks to the Peruvian Culinary Director at Pirata Group, Chef Arturo Melendez, who previously headed the kitchen at Tokyolima. To pair with the rich and vibrant flavours of chaufas, grilled meats and ceviches, Chifa has also added the classic Peruvian cocktail, Chilcano (HK$90) to the mix. Traditionally made with lime, pisco, and topped with fizzy ginger ale, the Chifa Chilcano gets two new flavours: Fruta de Temporada (seasonal fruit) and Maracuja (passionfruit). Along the same flavour train, there’s also what looks like tea-based renditions of pisco sours: the Birds’ Tongue (jasmine) and West Lake Loong Cheng (dragon’s well green tea). Head to Chifa from 5–7pm every day during Chilcano O’Clock to enjoy their cocktails and bar bites for just HK$48 a pop.

Sai Ying Pun’s latest Neapolitan pizza haven Homeslice is now home to a new selection of creative cocktails and classic tipples. Perfect to pair with a satisfying slice, signature cocktails include the London’s Calling (HK$90), which brings gin, ale, lemon and sweet ginger together for a bracing after-work bevvy; In Bloom (HK$85), shaking together a comforting blend of rum, yuzu, cinnamon, apple and lemon; and The Teenage Anarchist (HK$90), a simple yet punchy concoction of tequila, ancho chili, cucumber and lime. Other drinks rounding out the menu include a tequila Bloody Mary and the classic Sazerac, as well as a decent spread of Young Master, Gweilo and Heroes brand local craft beers.

Stable Bar and The Sergeant’s Bar at House 1881
House 1881 — or previously known as Hullett House — has undergone a transformation recently to bring five renewed dining venues in its historical grounds as the former Marine Police Headquarters. While all are worthy of some gastronomic exploration, Stable Bar — located above Stable Steakhouse — offers a quiet respite for sundowners. The bar boasts the largest gin collection on the Kowloon side, with 102 varieties of gin on its shelf, including local newcomer Perfume Trees gin. Guests can pick and choose their favourites to pair with their tonic of choice. Other signature libations include the Teaspresso — a twist on the classic espresso martini — and a hearty smoked negroni, with drinks using house-grown botanicals wherever possible. For a more laid-back affair, check out The Sergeant’s Bar, the former watering hole and officer’s mess now serving craft beers, cocktails and the self-proclaimed “best fish and chips in town.”

Art of the Wild at Old Bailey
Working with Perrier-Jouët, Old Bailey’s modern Shanghainese digs are about to be transformed into a jungle of art nouveau from 15 March for two weeks. The restaurant will feature a commissioned work by British artist Bethan Laura Wood, “Hypernature,” which creates a kaleidoscope of colour with its vibrant foliage. Inspired by the act of harvest, guests can also pluck champagne flutes directly from the tree, and enjoy a glass or three. While you’re there, you’ll want to check out a limited-time cocktail inspired by a group portrait by 19th century Shanghainese painter Ren Yi featuring three friends: The “Picture of Three Friends” brings together the well-balanced trio of gin, osmanthus and lemon for a sweet, bitter and sour cocktail — a winning combination that you can sip all night.

Le Comptoir Group seems to be on a roll: they’re at the helm of a vibrant new izakaya and live music venue shacking up at LKF Tower. With interiors boasting the moody cult artworks of Tomoo Gokita, and a kitchen headed up by Sean Mell — previously the Executive Chef of Nobu Hong Kong — expect refined izakaya fare with introverted, punchy cocktails worthy of Japan’s best drinking dens, and gorgeous live jazz to round out the evening. Silencio is expected to open its doors in March.

Honi Honi Tales of Tiki Voodoo
Hong Kong’s first tiki lounge takes on a decidedly voodoo theme for a pop-up cocktail menu this March — lord knows we need that spark of dark magic to get us through this manic month of things to do in town! The menu features dangerously fruity concoctions such as the Baron Samedi (HK$110), inspired by the Haitian spirit of the afterlife, featuring Plantation Grog, Absinthe, Lime, Angostura, ginger beer and honey cream for a sweet, slightly neurotic tingle. The “female counterpart” is Maman Brigitte (HK$110), featuring gin, Aperol, raspberries, lemon, sugar and sparkling wine. For a rather healthy injection check out the Haitian Acupuncture (HK$100) which will revive you with homemade Falernum syrup, Angostura bitters, pumpkin and sparkling wine. A new Sunset Happy Hour from 4–7pm Monday to Friday also gets you classic tiki cocktails from HK$35 and up.

SHÈ Sunset Hour
When contemporary Chinese cocktail and tea lounge Shè opened along the harbour-facing stretch of IFC mall, there was bound to be many late afternoons spent here admiring the sunset-washed skyline. Shè has just launched its new Sunset Hour from 4–8pm daily, serving up cocktails starting at just HK$68. Highlights include the Night Jasmine (HK$78), a citrusy and light drink to start off a great evening featuring white vermouth, yuzu juice and jasmine tea syrup. For those preferring more intense flavours, the Old Shanghai (HK$78) should impress, featuring whisky, bourbon, Chinese spicy sugar and yuzu soda. Mop it all up with delectable bar bites such as the drunken chicken wings (HK$148) and crispy fried wontons (HK$68).

Pizza and cocktail pairing at Kytaly
Legendary pizzaiolo Franco Pepe returns to Kytaly Hong Kong this week from 6–10 March. Working with mixology whiz and craft vermouth maker Giancarlo Mancino, the two have devised the perfect way to pair the right cocktail with the right pies in a revised pairing menu. If you haven’t already, Kytaly features a delightful house cocktail list by Mancino for you to pick your poison. Highlights include the Martiniano (HK$108), a sleek martini using London Dry gin, Mancino vermouth secco, secco, lemon oil and Japanese wakamomo peaches. There’s also the popular Negroncino (HK$108), a riff on the classic negroni using Amalfi gin and a host of Mancino liquors and aged in his signature clay pot for 48 hours.
In the same week, Pepe is also launching a brand new dish made to match Mancino’s vermouth libations. It’s certainly controversial, especially for pizza purists: The “AnaNascosta,” translating to hidden pineapple in Italian, is a surprising attempt by Pepe to challenge the notion of the tropical fruit on pizza. The small cone of fried pizza features grana cheese fondue, a cube of very cold pineapple wrapped in an unctuous slice of prosciutto crudo, topped off with a touch of licorice liquor. Minds are about to be changed.
