Looks like holiday celebrations are about to get tenfold for the people of Delhi (especially, the residents of Basant Lok) thanks to a third-generation luminary chef of Chinese Canadian origin, Kelvin Cheung. The celebrity chef of Mumbai’s Bastian and One Street, Cheung is bringing his distinctive and dichotomous culinary flare to New Delhi on 8th and 10th January 2020. Although this time, Cheung is coming with two new ventures called Dadel and Kiko-Bā in association with White Panda Hospitality.
The powerhouse chef owes his reputable culinary standing and celebrity patronage to his exclusive flavour groupings and hands-on approach. These solid foundations have laid the base for this new inclusive Asian dining venture, Kiko-Bā. Inspired by the folklore of shapeshifting tanukis, this restaurant will serve heirlooms of recipes from sacred homes of Eastern Asia celebrating tradition, flavour, and craftsmanship with modern resonance.
‘’With Kiko-Ba, I will be paying a tribute to my father’s legacy and taking our patrons on a sweet and savoury journey back to my roots where I’ll be reviving a beautiful bygone era of my own cooking, my father’s style of modern Hong Kong style Cantonese cuisine, and folding in flavours from my travels and beyond,’’ says Cheung.
On the menu, Cheung marries traditional cooking techniques with globally inspired flavours, which are then marinated in locally-sourced sustainable seasonal ingredients. The affordable and authentic Asian gourmet will embrace ingredients such as wild foraged mushrooms and baby heirloom corn spruced up with homemade sauce and in-house ferments. Merging the rustic styles of Scandinavia and Japanese design aesthetics, the restaurant’s setting centres around Robatayaki, which includes Small Plates, Large Plates, Robata Skewers, and Dimsums.
Dadel is an all-embracing cocktail bar that will be spearheaded by international celebrity mixologist from Poland, Bartosz Jakowiec of Modern Classic Bar Consultancy. Curated for the discerning audience of Delhi, each cocktail at Dadel promises an expedition of love, desire and obsession. All in an Amazonian flare, infused with ingredients like herbs, flowers, roots, spices and fruits, the cocktails are divided into 5 categories titled ‘Desire, Love, Obsession, Chase, Escape’. The venue reminiscent of an Elsie de Wolfe charm will instantly transport patrons to 18th-century anti-Victorian modified classicism.
Where: Kiko-Bā will be located at 62 Basant Lok Market, Vasant Vihar and will remain open from 12:00 p.m. to 1:00 a.m. on all days. For the inaugural month, it will serve as a dinner-only from 7:00 pm to 12:00 am.
