It’s a pizza party! Karyna Bajaj’s CinCin Mumbai just started the city’s first Pizza Club, and you want to be in on this.
A pizza is good even when it’s bad. And when it’s the ‘close your eyes and soak in the experience’ kinds, it can make your day, nay, an entire week. And the latter is exactly what the popular restaurant & bar CinCin has cooked up. In their endeavour to bring a “slice of wow and happiness” to diners, they’ve started a Pizza Club, where five of Mumbai’s most loved chefs have come together for a unique menu.
Each one has created a special pizza only for this club, lending to a limited menu of five options. There’s Prateek Sadhu, co-owner & Chef at Masque, who’s come up with ‘Prateek the FunGUY’. This pizza has Kashmiri Morels, Morel Miso, Green Garlic Aglio E Olio, and Stracciatella Cheese. Thomas Zacharias, executive chef at The Bombay Canteen has created ‘TZac’s Roast Chicken’ with Kundapur Ghee Roasted Chicken, Caramelized Onion, Curry Leaf Aioli, and Fior di Latte Cheese. You also have Hussain Shahzad from the TBC group. He’s the executive chef at O Pedro and has made ‘Hussain’s Goan Breakfast’ using Spicy Goan Chorizo, Crispy Slab Bacon, Soft Cooked Egg, Caramelized Onions, and Fior di Latte Cheese.
Chef Gresham Fernandes, culinary director at Impresario–the group that has Social, Smoke House Deli, Ishaara, and many others–has also joined the club. He’s brought on board the ‘5 Shades of Green with Gresham’, made with Roasted Kale, Green Peas, Confit Garlic, Lemon Zest, Fontal Cheese, and Parmesan Shaving. And if you’re looking for a non-savoury pizza, there’s Prateek Bakhtiani, chocolatier and founder at Ether. His pizza, ‘Ciao n Cherry says Prateek B.’ has Glazed Berries, Toasted Almonds, Thyme Infused Olive Oil, Balsamic, and Mascarpone Cheese.
All five not only bring in the chefs’ signature style elements into the pies, but they also come with their favourite playlists for a rather well-rounded pizza experience. Pair it with wine, your choice of soda, or have it on its own, but don’t want to give the CinCin Pizza Club a miss if you’re in Mumbai.
