Missed the Chinese New Year? No worries. With JW Marriott Mumbai Juhu turning 17 this year, Chef Huanxi Yan, Chef de Cuisine at Dashanzi, has prepared a stellar menu that you could still indulge in. The newly appointed chef of the progressive modern Asian restaurant has revived authentic Cantonese cuisine with new menu additions. With a prestigious career spanning over a decade, Chef Yan brings with him immense knowledge, new ingredients, and a keen understanding of Cantonese cuisine that focuses on dim sums, house-made noodles, and sushi. Dashanzi brings together redefined Asian cuisine in a contemporary format by bridging tradition with regional elements while making sure the menu is both fresh and exciting.
The Spicy Butter Shimeji Mushroom with Chef’s special spices was a revelation while the Crispy Fried Chicken with lemon glaze took the flavour up a notch. The steamed preserved Zhai Cai and Mushroom Mini Bun made for a great appetizer as did the Imperial Scallop Jade Soup. The Deep Fried Sesame Prawns, Spicy Garlic Pork Rolls, and Pan Fried Seabass with XO Sauce were easy on the palate and came with oodles of flavour while the Sanpei Chicken Claypot showcased the chef’s culinary skills beautifully. We spoke with the chef on how he envisions the renewed menu, the restaurant, and how he has recreated heritage dishes in a modern way.
What is focus of the new Dashanzi menu in 2019?
Our focus for 2019 would be providing new and inventive modern Asian cuisine to all our guests. That which can showcase the uniqueness of Dashanzi, and bring a new sense of creativity to our team.
You are revamping the Chinese and Cantonese menu – what’s the thought behind it?
We were looking to provide something new and exciting to our patrons. This also comes with the idea that we need to keep pace with emerging food trends around the world. At Dashanzi, it was also done to deliver the authentic taste of Cantonese cuisine and to deliver it to the city in a more contemporary way.
What are the highlights in this new menu?
The remarkable dishes would be the Crispy Chicken Breast with Lemon Glaze, Imperial Scallop Jade Soup, Sanpei Chicken Claypot, Tsing Tao Lamb Chop, and Spicy Mock Duck Fried Rice with Taro.
A dish that you think is a must-try?
The Butter Shimeji Mushroom with chef’s spice. It is seasoned with the most unique blend of chef’s special spices and herbs that take the love for mushroom and elevate it to the next level.
What are your thoughts on Cantonese food in India?
It is quite popular with all age groups because many cooking methods such as steaming and stir frying are used. The convenience and speediness of the preparation also makes it very popular. Cantonese food is known for its delicate flavour and aroma – one should look out for authenticity because if someone tries to change the dishes, you lose the essence of the cuisine. We aim to provide freshness and complexity of flavours in a luxurious setting.
