The Ritz-Carlton, Kuala Lumpur’s signature Guest Chef Dinner Series returns and this time they will be bringing you on a British gastronomic adventure. From the 24th to the 27th of April, Chef Dan Moon will be the guest chef at The Library.
Hailing from The Gainsborough Bath Spa in England, Moon brings with him several awards including three AA Rosettes. Throughout his career, he has worked in several well-knwon restaurants in the UK including the Hunstrete House, Ston Easton Park, and the Homewood Park Hotel. He is currently head chef at The Gainsborough Bath Spa.
For the six-course dinner at The Library, the degustation menu will start off with a chicken liver parfait served with almond granola, orange sorbet, and chicory. The second course follows with caramelised onion velouté served with pané quail’s egg, wild mushrooms, truffle, and hazelnuts. Next up is smoked salmon ballotine with yuzu caviar, horseradish mousseline, and coriander.
The fourth course presents a roasted duck breast with duck leg confit spring roll, plum, and sesame seeds. This is followed by goat’s curd prepared with lavroche, toasted walnuts, and pickled apple. Finally, the six-course degustation menu ends with an indulgent dark chocolate ganache with peanut butter mousse, banana ice cream, and salted caramel popcorn.
This six-course dinner is priced at RM350 per person, while the wine pairing option is priced at RM500 per person. The dinner will be available from the 24th to 27th of April 2018. Make your reservations here.
