No stranger to KL’s culinary scene, you might recognise chef Malcolm Goh from his years at Le Méridien Kuala Lumpur or The Ritz-Carlton Kuala Lumpur. Besides that, the chef is also a television star, having appeared in programmes such as Great Dinners of the World and Must Try Asia on the Asian Food Channel.
Goh’s latest project is Define:food, a modern European restaurant he co-founded with legal advisor-turned-restaurateur Ryan Yeoh. With a simple philosophy in mind — to serve quality comfort food that’s non-pretentious — Define:food was born out of the duo’s united love for food. We managed to have a quick chat with Goh while we sampled his signature dishes.
Lifestyle Asia (LSA): From doing talkshows to opening your own restaurant, you’ve certainly accomplished a lot in your career. What’s your recipe for success?
Malcolm Goh (MG): I would say passion, definitely. It plays a huge part, besides having lots of determination, and a good team to work with.
LSA: Now that Define:food is up and running, what other plans do you have for it?
MG: For now, we’re focusing our efforts on consistently producing food of great quality. Consistency is key.
LSA: What’s a dish you love and enjoy cooking at your restaurant?
MG: I enjoy making ice cream, so it’s no surprise that all the ice creams served at Define:food are made in-house.
LSA: What’s your go-to Malaysian or Singaporean dish? Will this be available at Define:food?
MG: Assam Laksa, which will be introduced in our menu soon. Make sure you give it a try!
LSA: What about hosting a culinary show of your own?
MG: We’ve thought about this too, and we’d like to be able to share some simple recipes with home cooks and food lovers, in the future. It might not be what we’d call a show, but more of a series of short videos on social media.
LSA: What’s your cooking philosophy?
MG: Learn to trust your fellow cooks.
LSA: Lastly, what are three condiments you could never go without?
MG: Sea salt, pink peppercorn and konbu.
