Do any of these sound familiar to you? You may find one or all of them applicable to the current whisky you’re drinking. However, like any other liquor, whether whisky or not, all are made to be different — even though some may be from the same cask. It may be a high claim to say that this is the ultimate guide to savouring whisky, but Jeremy Lee has a few pointers from his experience as The Macallan brand ambassador.

The Macallan Double Cask line expands with two brand new whiskies, The Double Cask 15 Years Old and The Double Cask 18 Years Old. The Double Cask is a whisky that many are familiar with since its introduction in 2016. It’s a journey that brings two different worlds together, in what the brand calls as a harmonious reunion of American and European oak sherry seasoned casks.

The story begins in Northern Spain and the French Pyrenees, where European oak is sourced from both of its vast green forests. Ohio, Missouri and Kentucky follow suit, with oak sourced from all three of these states’ lush forests. These oaks then meet in Spain, which is hand-crafted into casks that are filled with sherry. Immediately after seasoned, the casks are shipped to The Macallan Estate on Speyside where they are filled with new-make spirit. What followed is years of slumber, which after The Macallan’s Whisky Mastery team selects the best balance of spirit from both the European and American oak sherry seasoned casks with much skills and expertise. Thus, the Double Cask is born in a perfect balance of American oak’s delicate flavours of vanilla and European oak’s spice.

The Macallan Double Cask 15 Years Old carries the aromas of dried fruit, toffee and vanilla while promising a warming finish with a creamy mouthfeel. Lee recommends having it over ice, preferably with The Macallan Ice Ball, of course. As the 15 Years Old’s taste notes of honey, citrus and chocolate from the American oak balances out The Macallan’s traditional characteristics of rich fruits, sherry and wood spice. It also displays a golden butterscotch hue.

As for The Macallan Double Cask 18 Years Old, it’s best enjoyed neat with water at the side. That’s when the complexity of the flavours comes through; flavours that are more indulgent as the year progresses. It emits the aromas of dried fruits, ginger and toffee with a warm oak spice finish that’s balanced by citrus flavours of sweet orange. The Double Cask 18 Years Old also has a rich amber honey tone.
