The phrase “the new normal” is one of the most overused cliches and yet that’s exactly what Singapore’s restaurants are finding themselves in even as the Circuit Breaker is about to be lifted.
What started out as a mad scramble to keep the lights on by offering takeout and deliveries has evolved into a new rhythm. More restaurants are now offering creative dishes for you to enjoy at home. Here, we sift out this week’s highlights.
Lolla’s sea urchin pudding
This iconic dish made a splash when it first appeared on Lolla’s menu years ago. Here, glorious tongues of bafun uni sit atop a cold squid ink custard to be enjoyed slowly (and preferably with a teaspoon), brightened with a dollop of chives. Choose between two versions with different amounts of uni: 40 grams at $88 and 100 grams at $118 — both options come in a pair. Now if only the sea urchin and crab tart from the now-defunct Lollapalooza would make an appearance.

Pollen’s medjool date tart
There’s a new(ish) chef at Pollen who joined in late February right before the pandemic hit us all in a massive way. Chef Michael Wilson, whose last stint was as Executive Chef in Shanghai’s Puli Hotel and Spa, hasn’t had the chance to flex his culinary chops to diners here — at least not in person. In the meantime, the Australia-born chef has been putting out fascinating dishes and this medjool date and pistachio tart ($30 and measures 14cm) has our heart. The tart base is buttery and with just enough salt to balance the sweetness of the slivers of dates embedded in the custard. The blanket of pistachios on top, and in fact the entire dessert, is inspired by the flavours of the Middle East — and is that a hint of cardamom we detect?

LeVeL 33’s Steak with pepper sauce
A beautifully charred steak and an ice cold beer is sometimes all we need for a good night out and LeVeL 33 is making that a reality, albeit in your own home. This comes by way of a ready-to-cook meal kit and part of a range which sees dishes like veggie burgers and seabass with risotto.
