Family-run Kuya’s Kusinang Pinoy is nestled in the quieter area of Bugis, just opposite the towering National Library. Here, dig into hearty dishes like the Bulalo Special, a collagen-packed broth that comes with buttery bone marrow. Other favourites include the Sizzling Pork Sisig, a crackling snout-to-tail pork mix that’s sprinkled with lime juice and chilli flakes. Finish off with the refreshing Mais con Hielo and you’ll be good to go.

We don’t know about you, but Clarke Quay is the last spot we’d think of when it comes to grabbing a plate of Filipino food. Yet, between pints of beer and these addictive, savoury dishes, we totally understand how the combination works. Feast on the Adobo, a tangy, sweet and salty mix of meat that’s piled beside some steaming garlic rice, or the crowd-favourite Kare-Kare, drenched in a beautifully thick peanut sauce. Lechon is one of the Philippines’ most famous dishes around, and is similar to the Chinese roasted suckling pig. While both versions are usually served whole and only on special occasions, you can get your regular fix at Don Lechon, a humble shop in Katong that’s serving a variety of lechon rice meals. For starters, we reckon a serving of The Chopped Lechon, complete with a generous portion of the crispy roasted pork, a dome of white rice and an addictive vinegar-soy dipping sauce. Ready to take it up a notch? Be sure to shovel bites of the Lechon Sinigang, a piquant, thick broth that’s mixed with heaps of chopped lechon, white radish, long beans, kangkong and eggplant.

Iskina Cebu is bringing Cebu to Singapore with its mouthwatering dishes, one plate at a time. Besides a stunning lechon Cebu (for the uninitiated, Cebu’s lechon is said to best), the food truck also serves a mean Inasal na Manok (grilled chicken) and Spicy Bellychon as well.
