This just in: Chef Sun Kim’s restaurant Meta is the recipient of the American Express One To Watch Award 2021 for Asia’s 50 Best Restaurants.

Meta, the abbreviation for Metamorphasis, marries South Korea’s gastronomic heritage with chef Sun Kim’s international culinary background.

Kim revealed to The World’s 50 Best Restaurants, “I first saw Tetsuya’s (Wakuda) cookbook in 2008. The idea of a Japanese chef cooking modern Australian cuisine was completely new to me and something that I wanted to learn. I read the book every day until I got to the point where the only way I could learn more was to move to Sydney and work with Tetsuya himself. That was my dream job.”

And that he did. He managed to secure a job at Tetsuya a the age of 26 and has never looked back since. After two years at the locale, he was passed the reins to Tetsuya’s Singapore restaurant, Waku Ghin, in 2010. He then became executive chef at Meta in 2015.

After a rocky start, coupled with experimentations with Mediterranean flavours, he looked back to his hometown of Seoul and his mother’s cooking for inspiration. Today, the refined menu at Meta highlights classic European techniques that’s paired with Asian produce in dishes of Korean influence. 

“For now, I’m focused on improving my cuisine. Korean food is something that I can really cook with my heart,” said Kim.
