As tomorrow is National Day, we’ve found the perfect excuse to go out for an indulgent, celebratory meal. From a zesty tomato gazpacho to a strange (but delectable) blend of banana, kimchi and foie gras, and a refreshing double-boiled broth from a newly minted one-Michelin-starred restaurant, here are 3 scrumptious dishes to savour before you head out to partake in the nation’s festivities.

California Tomato Gazpacho by Adrift

Adrift’s gazpacho is a colourful mix of zesty ginger, fluffy burrata and cucumber jelly. Vegetable broth never looked this good.

The Dish: Who says nutritious food has to be boring? This tangy, chilled gazpacho is a delectable treat with its mix of cucumber jelly, fluffy burrata cheese and piquant ginger strips. It is one of the highlights of Adrift’s newly launched menu.

The Place: Opened by celebrity chef David Myers, Adrift offers cuisine prepared with fresh Californian produce and inspired Asian flavours. These are mostly served on small plates ideal for sharing. Also available is an omakase menu featuring dishes cooked with seasonal ingredients.

Presented in a whole coconut husk, Summer Pavilion’s double-boiled sea whelk soup is a tasty and nourishing treat.

The Dish: Delicious and nourishing, this double-boiled soup contains sea whelk, fish maw and tender pieces of chicken, and is served in a whole coconut husk. The broth is light and clean-tasting, allowing the natural sweetness of its ingredients to shine. This dish is part of a new dinner menu that Summer Pavilion has introduced in celebration of its first Michelin star.

The Place: Situated at The Ritz-Carlton, Millenia Singapore, Summer Pavilion is known for its contemporary Cantonese fare. The restaurant underwent a revamp last November and is now an opulent space with elegant Italian tableware.

Price: From S$118 per person, for a five-course set dinner.

The Dish: Combining sweet banana bread with foie gras and kimchi may sound completely bizarre, but it works surprisingly well in this new concoction at Ding Dong. The duck liver adds a delightfully creamy texture to the crisp, toasted bread, while the sweetness of the banana and sourness of the kimchi help mitigate its gaminess.

The Place: Specialising in Modern Asian cuisine, Ding Dong recently moved to a spiffy new location along Amoy Street. Its new space is a vibrant, trendy spot decked out in colourful retro posters and patterned chairs. The restaurant has also rolled out a refreshed repertoire of innovative Asian-inflected cocktails.
