The fine dining era can at times seem like a war zone as new players step onto the fine-dining arena, while former champions fall. Others yet are occupying the casual concepts domain, looking to make their mark there.
Think restaurateur Marco Pierre White, who steers away from formal set-ups with a more laid back concept as he opens his first Singapore restaurant. Chef-restaurateur Beppe de Vito meanwhile re-looks at Osteria Art with a new elegant space, dishing out progressive and contemporary takes on classic Italian cuisine.

A rebranded Osteria Art introduces a new vision for Italian cuisine. The evolution is led by chef Andrea de Paola, together with chef-restaurateur Beppe de Vito, focusing on quality produce from around the world in its dishes. The newly-christened Art also comes with refreshed interiors: decked in red leather and brass along with an elegant bar of Italian marble and cherry wood to enjoy cocktails at. Regulars in the CBD will appreciate that the three-course power lunch menu format remains available here.

What once housed two-starred Restaurant Andre will soon become Zen, an upcoming restaurant by Unlisted Collection and Swedish restaurateur Björn Franzen. The restaurant is helmed by an all-star brigade and will be presenting a tasting menu peppered with influences from Nordic, French and Japanese cuisine. Granted, the restaurant’s not open till November. But reservations are now open — so start booking if you want to be one of the first few to dine there.

This 188-seater Chinese restaurant is the latest to grace Marina Bay Sands’ hotel lobby. Helming the kitchen are chef Fok Kai Yee and executive chef Jason Lau, experienced with Cantonese cuisine. The menu, however, also brings in classic dishes from Beijing, Shanghai and Sichuan with contemporary takes. Go for the Smoked Chicken, infused with 15-year pu-er tea leaves and chrysanthemum flowers and the American Black Angus Beef braised for over five hours and finished with a brush of wild New Zealand honey. There’s also a dim sum menu available for both lunch and high-tea with elegantly presented morsels such as the Crispy Swan Puff with Cod Fish.

Meta’s chef-owner Sun Kim shies away from his Korean background with his latest project. The contemporary Indian grill will be led by co-owner Mano Thevar, formerly from Meatsmith Little India and Waku Ghin. While the namesake chef has never cooked in an Indian restaurant, he’s trained in European techniques and is looking to employ these in his dishes.

The restaurant-hotel by celebrity chef Marco Pierre White has finally opened its doors after a three-year-long wait. Located in a 19th-century shophouse along Mohamed Sultan Road, the restaurant is a colonial menagerie of Straits Chinese and classic British designs. The kitchen is led by chef de cuisine Andrew Bennett who works closely with White on the menu. Expect elegant interpretations of English pub food such as Fried Fillet of English Turbot (read: good ol’ fish and chips) and pies.
