Operation Dagger has announced the departure of its founding duo, Luke Whearty and Sasha Wijidessa, and with that comes the need for a new head bartender to run Chinatown’s famed underground cocktail den. That fresh presence is Thomas Girard, a French bartending stalwart who will take the reins as head bartender and creative director.
Operation Dagger has built a legacy for itself across the world as a bar that consistently reinvents the brackets of cocktail craft. Its concept is built on the pillars of fermenting and distilling all the components that make a good cocktail in-house, and every menu that the bar presents is a rollercoaster for both the mind and the palate.
Since 2015, this approach to bartending has resulted in Operation Dagger racking awards to its name, from being a staple presence on the Asia’s 50 Best Bars list to making it on the World’s 50 Best Bars ranking last year at 23rd place. Girard’s task is to extend that legacy, and his accolades offer enough promise to inspire the confidence that he will.

He has worked at the likes of London’s esteemed 69 Colebrook Row, and began embarking on a career trajectory that would see him help open bars like Paris’ Le Coq, as well as Hexagone, a collaborative effort with three Michelin-starred chef, Mathieu Pacaud.
“I am very honoured and excited to join the team as I have always looked up to Operation Dagger as a pioneer in drink-making… We need to continue our focus on a sustainable and zero waste model, still we want to have some deliciousness and fun along the way. We will keep being open-minded yet opinionated with a focus on flavour, creativity and great service,” said Girard about his new post in Singapore.
Girard will start at Operation Dagger come 10 September 2019.
