On 18 May, five of Singapore’s top bars will unite for a one-night-only tasting affair at Tippling Club. Titled Once Upon A Time In Singapore, the evening focuses on cocktails paired with small plate dishes by chef Ryan Clift and company.

The night is slated to begin with resident head bartender Joe Schofield crafting Tippling’s signature negronis aged with ultrasound technology. Aki Eguchi of Gibson comes in next to present his bar’s popular Ramos Gin Fizz interpretation. Meanwhile, Operation Dagger’s Juan Yijun will serve a cocktail inspired by Clift’s Vegetable Garden dish for the third course, with Joma Rivera coming in after to mix up Stone Fence, a spiced apple cider cocktail from 28 HongKong Street.

The revelry continues with Bai Jiawei of Employees’ Only, who will be bringing an EO signature to the dinner — a potent gimlet mixed with navy-strength gin. Make sure to leave some room for Philip Bischoff’s Mad Dog, as the Manhattan bartender will serve up a slice of mobster America with his cocktail.

We can’t think of a better way to spend a Thursday night out. The event is priced at S$155++ per person, for six cocktails and five small plate dishes.
