Grand Hyatt Singapore is known for its dining establishments located in the bustling heart of Orchard Road, namely Martini Bar (known for having one of the finest and largest selections of martinis in the city) and Mezza9, the hotel’s flagship restaurant.
Last year, the award-winning bar underwent a revamp, incorporating new interiors and an added extension to the bar, The Party Room. Now, the hotel’s flagship restaurant has just introduced menus that feature refreshed dishes crafted to showcase quality-driven sustainable ingredients and fresh produce.
The redesigned menus feature the use of sustainable ingredients, including seafood certified by the Marine Stewardship Council (MSC) and Aquaculture Stewardship Council (ASC), organic herbs from the hotel’s own rooftop, and organic greens from cooperative farms in Singapore and Cameron Highlands.
Not only do diners have greater assurance that non-exploitative methods have been used in Mezza9’s dishes, it has also allowed Grand Hyatt Singapore to reduce its carbon footprint for each 150kg shipment by approximately 130 times as compared to if it had continued to rely on air-flown vegetables from Australia and Europe.
The new set lunch menu, for instance, allows diners to customise their lunch with a wide range of starters and mains for a two course set lunch (S$35.00+), including desserts for a three-course set lunch (S$45.00+).
One highlight is the Luk Chin Yang grilled Thai fish balls, which boast flavours inspired by the town of Songkhla in Southern Thailand, as well as the Maine Lobster Hot Pot, prepared with ASC-certified Maine lobsters, mushrooms, garlic, spring onions, chilli, coriander from the hotel’s rooftop garden, and accompanied with ginger fried rice.
Other highlights include the Clam and Lobster Bake, Nuea Yang grilled Black Angus beef salad with tamarind and chilli from the Thai kitchen, and premium Nigiri and Sashimi with the kitchen’s Sushi Kiwami.
